SO SIMPLE, YET SO DELICIOUS

Bean, Mushroom and Fennel Casserole

Ingredients

• 1 Jar Pepitas Homestyle 

• Beans with Red Wine

• 1 Bulb Fennel

• Two large ‘Open Cap’  mushrooms (or about four large button mushrooms)

• Pinch salt

• Pinch of thyme or mixed

• Herbs

• Olive oil for frying

• Rice

Method

  1. Cook the rice according to the packet instructions

  2. Wash and chop the fennel bulb into small strips and clean and slice the mushrooms into bite size pieces

  3. Heat a dollop of olive oil in a large pan, then add the fennel and stir

  4. When nearly soft, add the mushrooms and continue to cook

  5. Add the herbs and salt and stir though then stir in the jar of Homestyle Beans

  6. Once hot, serve with the rice
